This week we are featuring the lovely Apple and Ginger Jelly by Claire Byers of Gardners Bay, Tasmania. Claire is the queen of Jellies, using home grown and locally grown fruits from the Huon Valley to make her perfectly clear and brilliantly coloured jellies. The Lotus Eaters Cafe have long been selling these special jars, and also using them to serve with their outstanding baguettes for breakfast. Most famously, her Quince Jelly has had people eating straght from the jar, and sold out in one week at our stall at Addison Road Markets! Claire also happens to be a Master Weaver, and textiles designer - what a clever woman! Check out her beautiful works here.
